Dairy-Free Caramel Flan

Flan is one of my favorite desserts from d and is very popular in Latin America! This version is dairy-free, naturally sweetened.

1. Add the sugar + water to a non-stick pan at low temperature. *Make sure the mix does NOT burn. Remove it when it has a nice caramel color and put it in the base of the mold or cups for flan. 2. In a bowl, beat the yolks by hand until they are well integrated. In another bowl, beat the whole egg by hand. 3. Next, combine the two mixtures and add the monk fruit. Mix very well and add the vanilla to the mixture. 4. Add the milk little by little, without mixing too intensely. 5. Pass the mixture through a strainer to remove excess foam or bubbles. 6. Cover the mold or the cups with aluminum foil to prevent water or steam from leaking into the mixture while it cooks. 7. Cook for 30-35 minutes. When done, insert a toothpick to verify that it comes out clean and is ready. 8. When it is at room temperature, please take it to the refrigerator for 2 or 3 hours and enjoy!
