Happy Monday! Start your week with these delightful blueberry bars. Enjoy them for breakfast or as a pick-me-up snack during the day!

Preheat the oven to 350 F. In a food processor, combine 1 cup of oats, almonds, protein powder (if using), and salt. Blend until all ingredients are well combined. Add the pitted dates and blend for one minute. Then, add the fresh or frozen blueberries and the remaining cup of oats. Continue to blend until the mixture becomes sticky and well incorporated. Transfer this mixture to a parchment-covered 8x8 square pan (or any suitable mold you have). Bake for 20-25 minutes. Allow the bars to cool completely before cutting them into individual bars. Enjoy during your breakfast or as a pick-me-up snack!
