Our Super Bowl or better…Benito Bowl snack this year will be Patacones or Tostones the Hispanic way. These crispy twice-fried plantains are perfect for game day, topped with guacamole, shredded meat, or other proteins.
1. Peel the green plantains and slice into 1-inch-thick pieces.
2. Heat oil in a deep skillet to about 325°F. Fry the plantain pieces until tender and lightly golden, about 2–3 minutes per side.
3. Remove and drain briefly.
4. Using a flat surface or tostonera, smash the fried plantains into flat rounds.
5. Mix the crushed garlic, water, and ½–1 teaspoon salt in a bowl.
6. Briefly dunk the smashed plantains into the garlic-salt water, then remove and drain excess liquid.
7. Increase oil temperature to 375°F. Fry the plantains again until crisp and deeply golden, about 1–2 minutes per side.
8. Remove, drain on paper towels, and season with additional salt to taste. Serve hot.
