Guilt-free Paleo Orange Cake

1. Place oranges in a pot and cover with cold water. Bring to a boil over medium-high heat. Boil for 40 minutes and drain. (keep an eye on the water level.)
2. Rinse oranges, then cool them so you can handle them. Slice into 1cm / 1/4" slices, then dice, removing any seeds. Cool completely.
3.Preheat the oven to 320°F—grease, and line two 8" round cake pans with baking/parchment paper.
4.Place oranges in a food processor. Crush on high for 10 seconds until you see a marmalade consistency. Add almond meal, eggs, baking powder, and coconut sugar—process for 10 seconds on high until combined.
5.Pour into the prepared cake pans and bake for 60 minutes until the surface is golden.
6.Let the cake cool in the pan for at least 15 minutes, and decorate if you wish!
